Cucumber Roll Ups

Ingredients: 1 large cucumber
1/8 teaspoon ground black pepper
6 tablespoons roasted garlic hummus
6 tablespoons roasted red pepper, chopped (sun-dried tomatoes would be good too)
6 tablespoons crumbled feta (if desired)

Use a veggie slicer to thinly slice cumber into long slices lengthwise.  Then, coat each slice with hummus and roasted pepper or sun-dried tomatoes.  Add feta if desired.  Roll up and enjoy. (these keep in the fridge well for an easy grab and go snack!)
